Well, I Would Never have Thought...?

Well, I would never have thought that I would enjoy cooking, baking and putting meals together.  I tried 2 new recipes this week.  One being Hamburger Soup which was Delicious, Thank You Kate for the recipe.  There has been reason changes in my house in diets, needing to watch for both sugar and salt intakes, its not the easiest thing to do.  Or so I thought, there is more and more products out there that are low or no salt as well as many things made with splenda or can to converted over into using splenda. 

Hamburger Soup
1 1/2 lbs. ground beef
1 medium onion,finely chopped
1 – 28 oz. can tomatoes
2 cups water 500 mL
3 – 10 oz. cans consomme
1 – 10 oz. can tomato soup ~ (Used a Hunts Tomato No Salt Sauces as part of the base)
4 carrots, finely chopped
1 bay leaf  ~ (I left the bay leaf out .. not one of the favorites in this house)
3 sticks celery, finely chopped parsley
pepper to taste
1/2 cup pot barley 125 mL ~ (I used 1 cup Orzo paste, likes a little like rice, and partial cooked it and then added it to the soup to finish cooking.)

Hunts Tomato No Salt Sauces

Brown meat and onions. Drain well. Combine all ingredients in large pot. Simmer covered, at least 2 hours, or all day. Serves 10.
I also added grounded pepper to the soup as well as to the ground beef while cooking it. 
This made a huge pot of soup, I have a couple of rounds for lunches as well as 2 or 3 meals.

My first attempts at Lemon Meringue Pie ... well, actually just the meringue part.  I picked up a graham pie shell and the filling but I did the meringue part and boy that was much easier than I thought.  And it was so good!! I am looking forward to trying out some custard pie recipes and maybe even a Saskatoon Pie in the summer.
